As long as your truck is pre-98 you can eliminated the ECM / PCM and you don't have a BCM to worry about. Your only issue with the gauges is going to be the speedo and you can work around that. In the carb conversion part you have to install a plane old style hei distributor and the proper intake that is meant for vortec heads as they have taller intake runners compared to other older style cylinder heads.I am installing a 1970 307 with a TH350 and an Edelbrock 1403 carb. The kickdown cable, held by the original bracket, is too short to reach the carb. My cable has about a 1 1/2 inch slot in the end.
